Sweet Potato Wedges

2 Sweet Potatoes
1 tablespoon olive oil
1/4 teaspoon black pepper
1 teaspoon brown sugar
1/4 teaspoon chili powder
1/4 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/4 teaspoon smoked paprika

1 baking sheet
1 good knife
1 medium mixing bowl
1 small mixing bowl/container
1 spatula (for mixing and tossing)

Place a baking sheet in your oven, and preheat to 220°C/425°F.
Get a big sharp knife and cut your potato into wedges. One potato should make around eight wedges.
Dump your wedges in to a mixing bowl, and drizzle with your favorite olive oil. Toss them around, get them all nice and covered.
In a small container, add the black pepper, brown sugar, chili powder, pumpkin pie spice, salt, and smoked paprika. Mix them up until they are, well, well mixed.
Sprinkle the spices over top of the oil coated potato wedges. Toss and mix and stir and mingle until the wedges are as covered with your spices as they can be.
Slide out your baking sheet that’s been getting nice and toasty (or take it out and set it next to you), and lay out your wedges.
Put the tray back in the oven, and let it cook for about 15 minutes.
Open your oven, and give your wedges a turn.
Let the smell waft in to the kitchen. Let it make anyone else in the nearby area nice and hungry.
Put them back in the oven, and cook for another 10 to 15 minutes.
Let them cool a little before ripping in to them.

Pro tips:

If you hate dishes, throw a piece of parchment paper on top of your baking sheet.
